Delicious Refreshing Iced Tea Recipes You’ll Love

iced teaThere’s nothing quite like sitting back in the summertime and sipping iced tea. These recipes are ideal for those idyllic summer days or even on camping trips.

Using either an iced tea jar or a mason jar fill your jar with fresh water. Once you have fresh water in your jar you can add in any of the following and create your own deliciously flavored teas.

 

*8 bags of your favorite herbal tea. Here are some ideas to get you started:

Chamomile
Lemon
Berry
Other herbal teas of choice
Once you’ve added in your tea bags, you’re free to mix and match any of the following and create your own unique flavors. Mix and match the following as desired.

Fruits

Strawberries
Raspberries
Thinly sliced lemons or limes
Thinly sliced oranges
Springs of mint, lemon verbena, lavender
Blueberries
Cucumber
Peaches
Pears
Apple slices (slice thinly)

Sweeteners:

Honey
Sugar
Sugar substitutes

Alcohol can add a grown up flavor to any tea. Add in a few shots of bourbon or vodka to give your tea an adult flair.

Lemonade is a natural addition to iced tea. If you are really into lemon flavors here is a great recipe to consider:

Use lemon or chamomile tea bags but use 1/2 of the water amount and use lemonade for the other half of the water.

Add in some thinly sliced lemon and garnish with lavender or mint. You could also add in some lavender syrup (or any other fruit syrup) for a unique taste treat.

Sweet tea is made using a basic recipe and adding in a bit extra sugar to taste. Consider using your favorite herbal tea and sugar with just a sprig of mint for a fresh sweet tea.

*Note: If using an iced tea jar add in 8 tea bags of your favorite herbal tea. If using Mason jars adjust accordingly for flavor.

Hearty Slow Cooker Overnight Breakfast Casserole

Overnight breakfast casseroleIf you’re camping in an RV or fifth wheel and you bring a crockpot with you, you’ll definitely want this overnight breakfast casserole recipe.  It makes a delicious traditional breakfast bake while you sleep, and who doesn’t like waking up to eggs, bacon, sausage, cheese and hash browns?  All you have to do is brew your coffee and you’re ready for breakfast!

Hearty Slowcooker Overnight Breakfast Casserole

Ingredients:

1 2 lb. package frozen shredded hash brown potatoes
1 lb. ground sausage, browned and drained
1 lb. bacon, cooked and chopped
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 small onion, diced
1 green pepper, diced
1 red pepper, diced
12 eggs
1/2 cup milk
1 teaspoon salt
1/2 teaspoon ground black pepper

Directions:

Grease a large 6 quart slow cooker with cooking spray.

Layer one third the hash browns in the bottom of the slow cooker.

Top with one third of the sausage, bacon, cheese, onions, green pepper, and red pepper. Repeat layers with the remaining ingredients.

Whisk together eggs, milk, salt, pepper.

Pour egg mixture over the top of the potato cheese layers.

Cook on low for 6-8 hours on low or 4 hours on high.

Serves up to 8 people.

Notes:  If your family is partial to more cheese, increase the amount of cheese between layers, and add a generous amount to the top as well.

If you prefer to cook this casserole overnight, do it on the low setting to prevent burnt edges and bottoms.  Not all slow cookers are created equal and some get hotter than others.

Peppermint Hot Chocolate – We’re passed the holiday season but our mouths don’t know it and will welcome the taste of peppermint and chocolate. You’ll be using cream, sugar, milk, vanilla, cocoa, chocolate chips, and peppermint chips. Oh, so good!

Red Velvet Hot Chocolate with Cream Cheese Whipped Cream – Oh, my, can you even imagine? You’ll need whole milk, chocolate chips, sugar, red food coloring, heavy whipping cream, and whipped cream cheese at room temp. It will all come together pretty quickly and you’ll be enjoying a little bit of heaven in no time.

Fry Bread Tacos
These will haunt you once you get a chance to experience them and you’ll find yourself yearning for more. They bring the old-style taco to a whole new level by replacing the traditional flour tortilla with the most heavenly fry-bread you’ve ever had. They are filling, though, so plan to take leftovers with you if you’re eating out. If you’re cooking them in the RV, we’d even have them for breakfast. Yum!!

You’ll need a few simple ingredients such as pinto beans, shredded cheese, picante sauce, taco seasoning mix, ground beef, flour, baking powder, salt, and some milk. You’ll fry up the bread and then top it with your taco fixin’s. Make extra – you really are going to be raiding the fridge tonight!

Sweet Onion Pie
This savory onion delight is encased in a buttery crust and crammed with sweet onions. I pairs especially well with pork. The crust is easy. You’ll be crumbling up some Ritz type crackers in butter and pressing it into a pie pan. The filling is a fragrant blend of onions sauted in butter and garlic. Add some beaten eggs, whole milk, chives and sprinkle with cheese and paprika. The whole neighborhood will be making excuses to stop by.

Sopapillas
This is a favorite in the southwest for something sweet after a deliciouls meal. They can be served with honey or cinnamon & sugar, or both! You’ll need flour, baking powder, salt, shortening, water, and some oil for frying. Once you make the dough and drop it into the hot oil, you can watch it turn golden brown and begin to puff up into little pastries. So, so, so good!
